I was reading a post on
My Wooden Spoon and Lori was sharing a recipe she likes for peppers. She asked what our favorite recipes are that include peppers, so I thought I'd post two that I really enjoy. And the great thing is they are both very easy!
Sweet-and-Sour Popcorn Chicken(from Sept/Oct '06 Simple & Delicious)
1 medium green pepper, cut into 1" pieces
1 small onion, thinly sliced
1 T vegetable oil
1 can (20 oz) unsweetened pineapple chunks
3 T white vinegar
2 T soy sauce
1/3 c packed brown sugar
2 T cornstarch
1 pkg (12 oz) frozen popcorn chicken In a large skillet or wok, stir fry green pepper and onion in oil for 3-4 minutes or until crisp-tender. Drain pineapple, reserving the juice in a 2-cup measuring cup; set pineapple aside. Add enough water to the juice to measure 1-1/3 cups; stir in the vinegar, soy sauce and ketchup.
In a bowl, combine brown sugar and cornstarch. Stir in pineapple juice mixture until smooth. Gradually add to the skillet. Bring to a boil; cook and stir for 2 mintues or until thickened. Add pineapple. Reduce heat; simmer, uncovered, for 4-5 minutes or until heated through.
Meanwhile, microwave or bake chicken according to package directions Stir into pineapple mixture. Serve immediately. Makes 4 servings.
My note - I serve this with either white sticky rice or egg noodles. Yummy!
Best Peanut Sauce1/2 c crunchy peanut butter
2 T soy sauce
1 t white sugar
2 drops hot pepper sauce, or 1-2 t pepper flakes
1 clove garlic, minced
1/2 c water In a small pan, stir together peanut butter, soy sauce, sugar, pepper sauce or flakes & garlic until well mixed. Gradually stir in water until texture is smooth and creamy. Cook over medium heat until slightly bubbly.
My note - after I cook the sauce, I like to add 1 or 2 cups of cooked shredded chicken (depending on how saucy I want it). Then I spread the peanut chicken sauce onto a prepared pizza crust (Boboli is good) and then add my other toppings - shredded carrots, minced bell peppers, diced red onions, chopped broccoli - whatever your faves are. I top the whole thing with some mozzarella cheese, and bake in the oven at 400 for 15 minutes. Very yummy, and depending on the amount of pepper sauce or flakes, it can have quite the kick! This is very similar to the Thai Chicken Pizza served at The Onion restaurant.
